Producing this Harney & Sons Culinary Matcha involves grounding the tea leaves between two stones and air drying which is why the color of the powder is almost neon green. The process has not changed from centuries ago. The aromas are faint and only discernible from the broth. They offer hints of honeydew melon sweetness over a base note of cooked spinach. Since it comes from air dried teas, there are no notes of toastiness. As the other green tea, this one is also caffeinated. Compared to the ceremonial Matcha, the culinary grade Matcha has a bit more astringent taste and is great to mix with other ingredients when cooking. Although some people won’t mind it as a regular tea drink, we recommend this Matcha to be consumed when prepared in pastries, ice cream, smoothies, Matcha lattes and other drinks.
